Kani Kurimu Koroke/Kroket Kani Cream

Kemarin2 dikasih resep ama Ching buat bikin kroket ala jepang. biggrin Dia dah bikin dulu, bisa diliat disini. makanya hari ini bangun dah pagi2 belanja Crab stick ama jamur….. Abis itu pulang potong2, rebus telor, tumis-tumis trus jadi dah…tapi mesti di kulkasin dulu. Nah tinggal kerja dulu dah, malemnya pulang kerja baru dah di bentuk di tepungin n goreng. Yummy bener…. makanan jepang enak2 deh.. Thanx Ching.wink Beli Crab stick satu bungkus 12k, jamur merang 1 ons 3k, susu cair ultra plain 1 lt 11,2k, Telur 2 butir 2k + Bombay 1 buah 1k. Total 29,2k bisa menghasilkan 20 buah kroket. Sisa susu saya buat strawberry milk shake….hehehe abis pasti ga tahan lama kalo susu dah dibuka. Nih resepnya:

Kroket Kani Cream

Bahan :
– 100-120 gr Crab Stick potong kecil-kecil
– 3-4 Mushroom iris kecil-kecil
– 1/2 Bawang Bombai iris kecil-kecil
– Garam + Lada sedikit
– 5 gr Mentega
– 2 Butir telur rebus potong kecil-kecil

Saos Putih:
– 50 gr Mentega
– 4 sdm tepung terigu
– 400 ml susu cair
– Garam

Cara :
1. Buat saos putih, Tepung di ayak. Cairkan mentega di pan lalu masukkan tepung terigu aduk sampai rata lalu matikan api, masukkan susu cair aduk sampai rata. Nyalakan api dan masak sampai mendidih lalu kecilkan api sambil tetap di aduk, masukkan garam (saya tambahkan kaldu). Aduk sampai menjadi kental seperti vla kemudian matikan kompor. Angkat sisihkan.

2. Cairkan mentega di pan lalu tumis bawang bombai dan jamur masak sampai kering, masukkan crab stick, garam + lada (tambahkan kaldu jika suka). Aduk sebentar lalu matikan api, masukkan telur rebus dan saos putih lalu aduk hingga rata.

3. Siapkan piring rata kemudian oleskan mentega, masukkan adonan sambil di ratakan. Dinginkan kemudian tutup dengan rapat dan masukkan kulkas +- 30 menit. (Diatas 30 lebih baik).

4. Kocok telur untuk celupan dan siapkan tepung panir. Keluarkan adonan lalu bagi 8, taruh minyak di tangan. Ambil adonan bentuk, celupkan ke telur lalu tepung panir. Lakukan hingga semua adonan habis. Kemudian masukkan adonan ke kulkas +- 10 menit biar tepungnya nempel.

5. Panaskan minyak goreng, kalo bisa sampe kroketnya terendam. Masukkan kroket goreng hingga kuning kecoklatan, lalu angkat. Waktu menggoreng jangan sering di bulak balik nanti adonan bisa pecah.

6. Sajikan dengan saus tomat dan saus sambel.

Yesterday I was given by Ching the Kani Kurimu Koroke recipe.biggrin She already made first, you may see here, so today I get up earlier to buy crab stick and mushroom…. after that go home slicing, boiling eggs, cooking the filling and the sauce it’s almost done…. but you must refigerate first. I left to work first, at the night after coming home, I model it, flour it n fry it. So yummy….. japanesse food is really good. Thanx Ching. wink Buy Crab Stick 1 pack 12k, mushroom 1 ounce 3k, plain milk 1 lt 11,2k, eggs 2 pcs 2 k + Bombay Onion 1 pcs 1k. Cost 29,2k could get 20 pcs of croquettes. Rest of milk I use to make strawberry milk shake…. hehehe cause after opening the milk could not be fresh for last. Now the recipe:

Kani Kurimu Koroke

Ingredients:
– 100-120 gr Crab stick slice tiny
– 3-4 mushroom slice tiny
– 1/2 Bombay onion slice tiny
– Salt + Pepper a little
– 5 gr Butter
– 2 Eggs boiled slice tiny

White Sauce:
– 50 gr butter
– 4 tbs all purpose flour
– 400 ml plain milk
– Salt

The Way :
1. Making the white sauce, sifter flour. Melting butter in the pan and put in sifter flour stir till flat after that turn off the stove, put in milk stir till flat. Turn off the stove cook till boiled then lower the stove n still stir, put in salt ( I add stock). Stir till thick like vla then turn off the stove. Lift n move away.

2. In the pan melting butter then stir bombay onion and mushroom cook till dry, put in crab stick, salt + pepper ( add stock if u like). Stir a moment then turn off the stove, put in boiled eggs and white sauce then stir till flat.

3. Get flat plate spread with butter, put in the dough and flattening. Cool it then cover up tight and put in the refrigerator +- 30 minutes. (Over 30 is better).

4. Mix egg for dipping n get breads crumbs. Get dough from refrigerator divide by 8, oily hand. Get n model dough, dip into egg then go to breads crumbs. Do to all dough. Then put the dough to the refrigerator for +-10 minutes to make the breads crumbs sticky.

5. Fry oil in the pan, put many oil till the croquettes sink. Fry the croquettes until yellow brown burn, the pick up. When frying do not reserve much cause it can make the croquettes smashed.

6. Served with ketchup or chili sauce.
