Butter Beer Dory Fish

Kepincut sama menu ikan dory di fish n co, jadi pingin buat sendiri. Soalnya kalo sering makan di fish n co bisa tipis nih kantongredface Dulu sih jarang ada di supermarket ikan dory, tapi sekarang banyak tuh diimport dari vietnam. Selidik punya selidik ikan ini memang banyaknya di perairan vietnam. Akhirnya beli dah 1 buah fillet ikan dory di care4 puri, lumayan harganya mau 30 k. Mulai dah cari resep, tadinya kepikiran bumbu tepung biasa aja or pake tepung roti yg tempura. Tapi dapet bocoran dari temen mesti pake bir. Wah mesti pake bir? penasaran juga, cari sono cari sini, ketemu dah resep fish n chips dari primarasa.smile Coba buat dah tepungnya, aneh juga baru kali ini tepungnya mesti pake bir, tapi pas dah jadi wah ternyata enak loh. Lain dari yg lain.biggrin Apalagi di cocol saus tartar, wah tambah sip. Fillet sepotong habis jadi rebutan… Anak-anak juga suka, 1/2 fillet abis di santap mereka. Sampai2 suami bilang mesti beli lagi nih. wink Sssst dapat bocoran di toko buah Jakarta lebih murah 3 fillet kena 32k.razz

Resepnya:
Bahan
600 gr fillet ikan kakap/dory
150 gr tepung terigu
1 sdt garam
1/4 sdt merica bubuk
2 kuning telur, kocok sebentar
1 sdm minyak goreng
200 ml bir
2 putih telur, kocok kaku
minyak untuk menggoreng
75 gr tepung maizena
400 gr kentang goreng batangan (buat pelengkap)

Saus Tartar : Campur jadi satu
200 gr mayones
50 gr gherkin /acar timun/pickles iris 1/2 cm
1 sdt capers cincang
1 sdm peterseli cincang
1/2 sdt saus mustard
1 sdm bawang bombai cincang

Untuk saus tartar saya modif dikit ga pake capers dan peterseli dan tambahkan cuka + gula dikit.

Cara:
1. Potong2 fillet ikan kakap/dory bentuk persegi panjang ukuran 2 x 8 x 1 cm, sisihkan. (Kalo saya cuma potong kayak steak ikan)
2. Campur tepung terigu, garam dan merica, buat lubang di tengahnya, masukkan kuning telur dan minyak goreng, aduk sambil tuangkan bir ke dalamnya. Setelah adonan licin, masukkan putih telur kocok, aduk rata.
3. Panaskan minyak goreng yg banyak dalam wajan. Keringkan potongan ikan dengan tisu dapur. Taburi tepung maizena, kemudian celupkan satu persatu ke dalam adonan tepung.
4. Masukkan ke dalam minyak panas, goreng dengan panas sedang hingga matang dan berwarna kuning kecokelatan, angkat, tiriskan.
5. Taruh ikan goreng diatas piring saji, hidangkan panas dengan kentang goreng (french fries) dan saus tartar.

Wah must use beer? make me curious, search here n there, find the recipe fish n chips from primarasa. smileTry to make the fluor, is kind weird use beer for coating fluor, but when its done is really delicious. Is unique. biggrin Especially bundle with tartar dip, wah is make more delicious. 1 pcs fillet finished become quarrel…. My kids also like it, half of fillet eating by them. Then my hubby said must buy another more. wink Sssst got info at Jakarta fruit market was cheaper 3 fillet cost you 32k.razz

The recipe:
Ingredients:
600 gr fillet snapper fish
150 gr all purpose fluor

2 egg white mix untill stiff
cooking oil for frying
75 gr corn starch
400 gr french fries

Tartar Sauce : Mix together
200 gr mayonnes
50 gr gherkin slice 1/2 cm
1 tsp capers minced
1 tbs peterseli minced
1/2 tsp mustard sauce
1 tbs onion minced

For the Sauce I modif a little didn’t use capers n peterseli and add little vinegar and sugar.

How to make:
1. Cut fish fillet square size 2 x 8 x 1 cm move aside. (I cut like fish steak)
2. Mix flour, salt and pepper, make hole in the middle, put in egg yolks and cooking oil, stir while pour beer in to it. When the dough glossy, put in white egg mixed, stir even.
3. Heat manya of cooking oil in the pan. Dry out a cut fish fillet with kitchen paper. Sprinkle with corn starch, then put in one by one to the flour coating.
4. Put into the hot oil, fry with medium heat till done and brownie yellow colour, lift and leak through.
5. Put fry fish on the plate, served hot with french fries and tartar sauce.
