Task 9 # Red Snapper Tempura With Seaseed Batter And Curry Salt

Wah abis bikin ikan dory eh dapet tugas ikan lagi…. Tapi namanya juga tugas yah mesti buat dah, supaya yg buat jadi pada pinter.smile Jarang-jarang menyajikan makanan dengan ikan kakap merah, tadinya dah mau ganti ikan lain aja. Tapi penasaran juga sama ikan kakap ini. Biasa pakainya yg kakap putih. Akhirnya pas minggu ke care4 beli dah fillet ikan kakap merah. Wih mahal juga ternyata 1 ons kena 13,5 k. Saya beli ga sampai 3 ons kena 35 k. Ketahuan nih jarang masak, jadi ga tau pasaran bahan makanan. redface Tapi jujur aja kalo ga ada games kayak gini, rasanya bisa kena penyakit malas buat masak, abis ga ada tuntutan sih. Biasa kebiasaan sekolah masih kebawa, ada pr baru rajin buat ga ada boro-boro mau di coba buat. wink

Anyway abis itu beli bubuk kari di bagian bumbu dapur, kena 8,5 k. Nori sih dah ada dirumah biasa, stok buat bikin sushi.smile Bikinnya sih kemarin malam, abis pulang kerja. Potong-potong ikannya, buat bumbu tempura abis itu di celup dah ikan dan digoreng. Cocolannya kari bubuk pakai garam dikit. Tapi saya tambahkan cocolan mayonaise kesukaan keluarga. Hasilnya suami suka banget, sampai-sampai mertua bilang sekarang suami doyan ikan yak? Jawabnya?…… yah karena dimasakin terus sama istri…redface

Contekan resep
Bahan:
300 gr daging ikan kakap merah dengan kulit (saya pakai fillet jadi tidak ada kulit)
100 gr tepung terigu u/ melapis
Minyak u/ goreng

Adonan Tempura :
– 170 gr tepung terigu protein sedang
– 2 gr rumput laut kering atau nori yg dipotong2
– 250 ml air es
– 1 kuning telur

Curry Salt:
1 gr Japanese curry atau bubuk kari
6 gr garam halus
1 bh jeruk nipis u/ hiasan

Cara :
– Panaskan minyak cukup banyak
– Buatkan adonan tempura : aduk semua bahan hingga rata
– Potong2 daging kakap merah menjadi 10 bagian. Gulingkan di tepung terigu, masukkan ke dalam adonan tempura
– Goreng ikan sampai kering. Angkat, tiriskan diatas kertas tisu dapur.
– Aduk bahan curry salt, hidangkan dengan ikan kakap merah lalu hias dengan irisan jeruk nipis.

Wah after making dory fish eh got task with fish again…. But like it said task then you must make it, to get better on cooking. smile Is rarely serve food with Red Snapper, first I want change with other kind of fish. But have a little curious with Red Snapper. Usually using White Snapper. Finally last sunday went to care4 bought Red Snapper fillet. Wih the price was so expensive 1 ounce got 13,5 k. I bought not even 3 ons got 35 k. Looks like I really rarely cooking, so I didn’t knew the price market for raw food.redface Honestly if there is no games like this, I will got lazy sickness for cooking, cause there is no demand. Normal school habit still in, when there is homework I will frequently make it, when there is no I never touch the book.wink

Anyway after that bought curry powder at the kitchen spice stall, got 8,5 k. Nori I already had at home my stock for making sushi.smile I made it last night after work. Cut the fillet, made tempura spice after that coated the fillet and fry. Dip was curry powder with a little salt. But I add mayonaise dip my family favourite. My hubby likes it so much, till my mother in laws tease him said looks like now he really like fish so much? My hubby answer?…….. that’s because I always cook it for him…..redface

The recipe
– 300 gr red snapper with skin ( I use fillet with no skin)
– 100 gr all purpose fluor for coating
Cooking oil for frying

Tempura mix :
– 170 gr all purpose fluor
– 2 gr dry seaweed or cutting nori
– 250 ml ice water
– 1 egg yolk

Curry Salt:
– 1 gr Japanesse curry or curry powder
– 6 gr kitchen salt
– 1 pc citrus fruit for garnish

How :
– Heat much cooking oil
– Making tempura mix : mix all ingredient till even
– Cut fillet into 10 pcs. Roll over in all purpose fluor, put into the tempura mix
– Fry fish till dry. Lift up, leak through on kitchen paper
– Mix curry salt, served with Red snapper fish then garnish with citrus fruit

  1. >ikannya gak bau amis lho za yg g punya, soale g pake jeruk nipis sebelum masak, trus dibersihin lg, lalu pake garam lada deh biar wangi, baru goreng.. hasilnya enakk lhoo, empuk banget so smooth gitu lohh.. walau dikit tapi ludes.. hehehhe
