Task # 10 Tiramisu Frozen Cheese Cake

Dah giliran lagi dah buat tentuin tugas, kepingin buat tiramisu ah.. Beli dah bahan tiramisu keju mascarpone wah mahal yak kena 45k merk Yummy. N beli whipped creamnya merk Roselle 1 lt 40k, anggur hijau 23k, kiwi 5 buah 27k, tapi semua kecuali keju mascarpone masih ada sisa sih. Trus ada pake kopi instan, dan kahlua serta pasta moca. Wah apa nih jadinya??smile Resepnya dari buku resep tiramisu ala cake shop favorit, tapi di modifikasi dikit karena ga ada bubuk tiramisu. Sayangnya hasilnya suami bilang agak aneh…. Saya tanya yg lain sih bilang enak. Kayaknya sih keju mascarpone itu lebih banyak susu jadi terlalu berasa apalagi dengan campuran kahlua, suami ga biasa aja. Saya sih bilang enak…. (Pssst Foto yg saya tampilkan cuma satu contoh, yg pakai coklat bubuk tidak difoto… dan banyak variasi lainnya yg tidak di tampilkan) Maafkan yak…!

Resep aslinya:
Modifikasinya :
Bahan I :
Adonan keju krim
– 4 sdt gelatin bubuk
– 4 sdt air hangat
– 2 sdt kopi instant bubuk
– 40 ml liqueur kopi/brandy/rum (saya pakai pasta mocca dan kahlua)
– 500 ml krim kental
– 500 gr krim keju mascarpone
– 100 g gula bubuk

Bahan II:
20 buah sponge fingers (Saya ganti dengan sponge cake 6 telur)
50 gr kopi instan
500 ml air panas
100 gr gula pasir

Hiasan :
Strawberry
Kiwi
Anggur hijau
Jeruk Kupas
Coklat Bubuk

Cara Membuat :
1. Sirup kopi; campur kopi dengan gula dan liqueur kopi/brandy/rum, sisihkan.
2. Adonan gelatin; campur gelatin dengan air, tim dalam panci berisi air panas sampe gelatin larut. Tambahkan kopi bubuk dan liqueur kopi/brandy/rum, aduk rata. Sisihkan.
3. Taruh wadah berisi krim kocok dalam baskom berisi air es. Kocok krim dengan mixer berkecepatan sedang, sampe krim mengembang dan membentuk puncak2 runcing dan kaku. Sisihkan. (Atau kocok tanpa baskom isi es, waktu krim keluar dari kulkas)
4. Kocok krim keju dan gula bubuk dengan mixer berkecepatan sedang sampe lembut. Masukkan larutan gelatin dan kopi bubuk, aduk rata.
5. Masukkan krim kocok aduk rata.
6. Siapkan sponge cake, siram dengan larutan kopi, dan pagar dengan mika. Siram atasnya dengan adonan krim keju.
7. Taruh buah hiasan, setelah itu masukkan lemari es hingga membeku.
8. Sajikan dengan melepas pagar mika.

Now is time for me to pick recipe again, I want to make tiramisu cake. The ingredients for tiramisu was mascarpone cream cheese, it was expensive got 45k brand Yummy. N bought whipped cream brand Roselle 1 lt 40k, green grapes 23k, kiwi 5 pcs 27k, but all ingredients I bought have residue unless mascarpone cream cheese. Also using instant coffee, kahlua and mocca pasta. Wah what could this be??smile The recipe is from tiramisu ala cake shop favorite book, but I modifikation a little, cause I don’t have tiramisu powder. Too bad my hubby said the cake taste a little weird…. but I asked the other they said was good. Looks like the mascarpone cream cheese has more milk on it so to milky and with mix ingredients kahlua, my hubby doesn’t familiar with the taste. I said the taste was tasty…. (Pssst the picture I present just one of other sample, there is one with chocolate powder on top for garnish not being shoot…. and many other variation there is not present) Forgive me…!

And here is my modification.
Modifikasinya :
First Mix:
– 4 tsp gelatine powder
– 4 tsp hot water
– 2 tsb instant coffee powder
– 40 ml liqueur coffee/brandy/ rhum ( I used mocca pasta and kahlua)
– 500 ml whipped cream
– 500 gr mascarpone cream cheese
– 100 gr castor sugar

Second Mix:
– 20 pcs sponge fingers/lady fingers ( I changed with sponge cake 6 eggs)
– 50 gr instant coffee
– 500 ml hot water
– 100 gr castor sugar

Garnish :
Strawberry
Kiwi fruit
Green Grapes
Orange
Chocolate Powder

How :
1. Coffee syrup; mix coffee with sugar and liqueur kopi/brandy/rhum, move aside.
2. Gelatine mix; mix gelatin with water, steam on the pan with hot water till disolved. Add coffee syrup, stir even. Move aside.
3. Put bowl with whipped cream into bigger bowl the have ice water on it. Mix cream with mixer with medium speed, till swell and make sharp top and stiff. Move aside. (Or mixing without bigger ice water bowl, when cream out of from refrigerator)
4. Mix cream cheese and castor sugar with medium speed mixer till soft. Add in gelatine and coffee mix, stir even.
5. Put in whipped cream, stir even.
6. Prepare sponge cake, pour with coffee mix, fence with plastic paper. Pour cream cheese mix on top.
7. Garnish with fruit, after that put in the refrigerator till frozen.
8. Served with removing the plastic paper fence.
